Soup “Kharcho”

Kharcho soup, a recipe with chicken. Delicious, aromatic, spicy. Actually, this is a beef soup, but Georgians often cook kharcho soup from chicken.

Ingredients

  • Broiler chicken – 1 pc.
  • Rice – 0.5 cups
  • Garlic – 1 head
  • Butter – 50 g
  • Bulb onions – 1 pc.
  • Carrots – 1 pc.
  • Tomato paste – 2 tbsp
  • Greens – 50-60 g
  • Salt – 1 tbsp

Directions

  1. Everything you need to make kharcho soup.
  2. Rinse the chicken and cut it into portions.
  3. Pour 2.5 liters of boiling water over the chicken and cook until tender (30-40 minutes) over medium heat, covered.
  4. Rinse the rice.
  5. Place the washed rice in the broth. When it starts to swell (after 10-15 minutes), add salt to the soup.
  6. Peel, wash, and finely chop the onions and carrots.
  7. Peel the garlic and chop finely.
  8. Heat the butter in a skillet.
  9. Sauté vegetables over medium heat, stirring for 2-3 minutes.
  10. Add tomato paste before finishing frying.
  11. And mix well.
  12. Transfer the garlic to the pan with the vegetables. Simmer the vegetables together for about 5-7 minutes on the lowest heat, stirring occasionally.
  13. Transfer vegetables to soup.
  14. Prepare kharcho dressing separately. Peel and chop the garlic, then crush it a little. Wash and chop the herbs.
  15. Mix the garlic with finely chopped dill and basil.
  16. Our kharcho soup is ready. Sprinkle with dressing when serving.
