Ingredients

  • 1 onion (s)
  • 20 g clarified butter
  • 1 liter water
  • 1 cube meat stock
  • 500 g carrot (s)
  • 500 g potato (s)
  • 1 can beans, white
  • 1 apple
  • 1 pinch (s) pepper
  • 1 dash Tabasco
  • 1 bunch parsley
  • 1 sausage (Mettwurst)

Instructions

  1. Peel the onion and cut into eighths. Heat the clarified butter in a pan and sweat the onion pieces in it. Pour in the water and bring to the boil. Dissolve the stock cube in it.
  2. Clean, wash and peel the carrots. Peel the potatoes and cut both into pieces. Pour into the broth and cook for 20 minutes. Then add the beans. Wash the apple, peel and dice it, cut the sausage into slices. Add everything to the broth and cook for another 10 minutes.
  3. Wash the parsley, pluck the leaves from the stems, cut into small pieces and add. Season well with pepper and Tabasco and season to taste. Bread rolls or fresh baguette go well with it.
