Ingredients

  • 2 cucumber (gardener`s)
  • 1 avocado (s), ripe
  • 1 tablespoon sesame seeds, white
  • 4 handfuls spinach, boy

For the dressing:

  • 0.5 ½ lime (s), juice from it
  • 2 tablespoon soy sauce
  • 2 teaspoons sesame oil, dark
  • 1 teaspoon rice vinegar, alternatively mild white balsamic vinegar)
  • 1 tablespoon oil (peanut)
  • 0.5 teaspoon ½ horseradish (wasabi), freshly grated, or wasabi powder or paste

Instructions

  1. Wash the spinach, remove the stalks and cut into strips. Peel the avocado, remove the stone and dice. Wash the cucumber and peel if desired, then cut in half and remove the seeds with a teaspoon, cut into slices. For the dressing mix all the ingredients well and pour over the salad, mix well again before serving and sprinkle the portions on the plate with sesame seeds. We like the salad best with light poultry or fish dishes. A few hints and tips: Fresh wasabi is hard to get in this country, sometimes you get lucky in Asian shops. Elsewhere it is also called water horseradish or Japanese horseradish. Fresh wasabi loses its sharpness very quickly in the air, as does wasabi powder. If this is used, stir the dressing just before serving. Wasabi paste is available in almost every Asian store, but also in supermarkets. This usually dissolves very poorly in the dressing - it is best to mix it with a little oil first. If you don`t know the wasabi sharpness, it is better to dose carefully at first. With sesame oil, make sure that you have the dark one made from roasted sesame. If you don`t have that, you can carefully toast the white sesame seeds in a non-stick pan to sprinkle with, to get at least a little of the flavor. The peanut oil can best be left out or replaced with another vegetable oil, of course it is better if you have it with you. The rice wine vinegar can easily be replaced with white balsamic vinegar. Gardener cucumbers are the smaller cucumbers, not snake cucumbers, but neither are sour cucumbers. Usually available on the market, but I`ve already seen them in a Turkish shop as Lebanese cucumbers. An avocado is just right for this salad if it gives way to light pressure, but doesn`t leave a dent. If you want to prepare the salad a day earlier, under no circumstances cut the spinach beforehand.
