Put the flour in a bowl, knead with the eggs, salt and butter. Chill the dough. Wash the spinach leaves (or thaw frozen spinach briefly and cut into small pieces), blanch briefly and cut into small pieces.
Finely chop the onion and garlic and sauté in butter until translucent. Add rice and spinach, pour hot vegetable stock and cook rice until al dente.
In a bowl, whisk together the eggs, grated cheese, cream, salt, pepper and nutmeg and stir in the spinach-rice mixture. Roll out the dough and place in a greased springform pan. Pour in the spinach rice, spread the bacon cubes over it. Bake in the oven at 200 ° C for about 30 minutes.
