Spinach with Nuts and Raisins

Good spinach recipe. Instead of wine, you can use a little wine vinegar as an ingredient for added pungency. Swap broccoli for spinach – it will be just as tasty and healthy.

Ingredients

  • Olive oil – 1 tablespoon.
  • Dark raisins – 3 tablespoon.
  • Pine nuts – 3 tablespoon.
  • Wine (dry sherry, white or dessert wine) – 3 tablespoon.
  • or a little wine vinegar (optional)
  • Spinach (or broccoli) – 200 g
  • Paprika – 1 teaspoon
  • Salt
  • Ground black pepper

Directions

  1. Toss the butter, raisins, and nuts in a skillet over medium heat. From the moment they begin to sizzle, cook for 1 to 2 minutes, stirring constantly, until lightly browned. Pour in the wine and cook until the amount of liquid is halved.
  2. Add well-washed and chopped spinach and paprika and stir for 5 minutes. Season with salt and pepper to taste. Serve hot or cold.
