Stew of Chopped Potatoes and Minced Meat

This stew of potatoes and meat is cooked in a pan. Potatoes are grated and fried with vegetables and minced meat.
Ingredients
- Potatoes (peeled and coarsely chopped) – 2 1/2 cups
- Minced beef – 1 1/2 cups
- Fresh tomatoes (finely chopped) – 1/2 cup
- Bulgarian pepper (seeded and finely chopped) – 1/2 cup
- Onions (finely chopped) – 1/2 cup
- Salt – 1/2 teaspoon.
- Ground black pepper – 1/4 teaspoon.
- Olive oil – 1 tbsp
- Large eggs – 4 pcs.
Directions
- In a large bowl, combine potatoes, minced meat, chopped tomatoes, bell peppers, onions, salt, and black pepper.
- Heat the olive oil in a large skillet, pour the potato mixture into the preheated pan, cook, stirring occasionally, for about 10-15 minutes, until the minced meat is ready. Then make 4 indentations with a wooden spoon.
- Pour one egg into each cavity, add salt and pepper, cover the pan and cook the potato stew for another 10 minutes, until cooked.
