  • 750 g beef, (boiled beef, tonue piece or le slice)
  • 1 kg stick jam
  • 1 kg potato (s)
  • salt and pepper
  • some butter or cream

Instructions

  1. The farmer pulls turnip stems by sowing May turnips too densely. The plants grow fast and slim. The beets are unusable, but the stems are tasty and crisp.
  2. Preparation:
  3. Remove the dark leaf parts from the turnip stalks and discard. Wash the stems and the thick leaf veins thoroughly and let them drain, then cut into pieces approx. 3 cm long. Peel and dice the potatoes.
  4. Simmer the beef well in about 1/2 - 3/4 l water (salt and pepper).
  5. Put the cut stick jam in a sieve and briefly pour boiling water over it, after 1 1/4 hours add to the meat, after another 1/4 hour add the potatoes to the meat and the stick sauce and another 1/2 hour further let it boil. After the
  6. 2 hours of cooking time, take out the meat and some broth (so that the vegetables don`t get too soupy - the stick sauce draws water). Coarsely mash the stick sauce and potatoes, season with salt and pepper and refine with a little butter or cream.
  7. Serve the meat in slices.
  8. Stalk jam is also good for freezing.
