Ingredients

  • 200 ml milk
  • 500g flour
  • 1 cube yeast, fresh (42g)
  • 175 grams sugar
  • 125 g butter
  • 1 pinch (s) salt
  • 2 tablespoon cinnamon, ground
  • 1 egg (s), (size M)
  • 1 tablespoon whipped cream

Instructions

  1. Warm up 100 ml of milk. Put the flour in a bowl. Make a hollow in it. Crumble the yeast into the hollow. Add 25g sugar and the warm milk. Mix with a little flour to make a pre-dough and cover and let rise in a warm place for about 20 minutes.
  2. Warm up 100 ml of milk. 75g softened butter in pieces, add the warm milk, 75g sugar and salt to the pre-dough and knead into a smooth dough. Cover and let rise again in a warm place for approx. 40 minutes.
  3. Melt 50 g butter. Mix 75 g sugar and cinnamon. Separate egg. Mix the egg yolks with the cream. Now roll out the dough into a rectangle (45X30cm) and brush with melted butter. Sprinkle with cinnamon sugar. Now roll up the dough from the long side. Brush the edge of the dough with egg white and press down firmly. Divide the roll into 3-4cm wide slices and press them in lengthways with a wooden spoon handle.
  4. 4. Place Franzbrötchen on a baking sheet lined with baking paper. Cover and let rise for another 20 minutes. Brush with the egg yolk mixed with the cream.
  5. Bake in a preheated oven (electric stove: 200 ° C / convection: 175 ° C / gas: level 3) for about 15 minutes. Let cool down.
