  • 280 g flour
  • salt
  • 125 g butter
  • 3 egg (s)
  • 250 g cheese (Emmentaler)
  • 300 ml cream
  • Cayenne pepper
  • Fat for the shape

Instructions

  1. For the dough, knead 250 g flour, salt, cold butter in flakes and 1 egg to form a smooth dough. Wrap the dough in foil and chill for about 30 minutes.
  2. Place the dough in a greased dish (24 cm) and press on the edge. Preheat the oven to 180 degrees.
  3. Grate the cheese for the topping. Whisk with the cream, remaining eggs and the rest of the flour. Season with salt and cayenne pepper. Pour the icing onto the dough in the mold. Bake for about 45 minutes.
  4. TIP: Bake the flan on the lowest rack so that the dough is really cooked and crispy.
