Ingredients

For the dough:

  • 200 g flour
  • 0.5 teaspoon ½ salt
  • 50 g butter, cold or mararine
  • 10 g yeast, crumbled
  • 100 ml water

For covering:

  • 200 g Gruyère, mild or mountain cheese
  • 100 g Emmentaler
  • 1 tablespoon flour
  • 180 ml cream
  • 200 ml milk
  • 2 egg (s)
  • 0.25 teaspoon ¼ salt
  • pepper
  • nutmeg

Instructions

  1. Mix the flour and salt in a bowl. Cut the butter or margarine into small pieces and rub by hand with the flour to form an evenly crumbly mass. Mix the yeast with water, add, quickly combine everything into a soft dough, knead briefly and leave to rest for about 10 minutes. Roll out the dough, cover a prepared 28 cm Ø baking pan with it, and prick the dough base tightly with a fork.
  2. For the topping, mix the grated cheese with the remaining ingredients, stir well and spread on the dough base. Bake the cheese flan for about 30 minutes in the lower half of the oven preheated to 220 ° C.
