Tangerine Cheesecake Ingredients

  • Coffee shortbread cookies – 300 g
  • Butter – 100 g
  • Cottage cheese – 350 g
  • Sour cream – 150 g
  • Sugar – 230 g
  • Starch – 1.5 tbsp
  • Eggs – 2 pcs.

  • Mandarins – 3 pcs.
  • Water – 150 ml
  • Vanilla sugar – 5 g
  • Instant gelatin – 25 g

  1. We will prepare the necessary ingredients for making a cheesecake from cottage cheese, with tangerine jelly.
  2. Cut well-washed tangerines into pieces (along with the skin), add sugar (150 g), water and send to low heat for 60 minutes.

  3. Mix cottage cheese, sour cream, sugar (remaining) and eggs with a blender until smooth. Add starch and mix thoroughly.
  4. Grind the cookies into crumbs. Add melted butter to it, mix.
  5. Put the cookie crumbs in a split form with baking paper, lightly oiled. We tamp well.
  6. Put the curd mass on the biscuit base.
  7. We send the curd cheesecake to the oven, preheated to 160 degrees, for about 35-40 minutes. After that, leave the cheesecake to cool in the oven.
  8. Puree tangerines (hot) with a blender. Add vanilla sugar and instant gelatin, stir until the gelatin dissolves. Leave to cool.

  9. Then pour the tangerine jelly onto the curd layer. Place the cheesecake mold in the refrigerator for at least 6-8 hours.
  10. Remove the tangerine cheesecake cake from the mold and serve it to the festive table.
