Ingredients

  • 200 g couscous
  • salt
  • 1 onion (s)
  • 1 clove garlic
  • 400 g cherry tomato (s)
  • 3 tablespoon olive oil
  • 1 teaspoon tomato paste
  • Pepper, freshly ground
  • 1 pinch (s) sugar
  • 2 stems parsley, smooth
  • 2 stems mint
  • 150 g feta cheese
  • 300 ml boiling water

Instructions

  1. Pour 300 ml of boiling salted water over the couscous in a bowl and cover and leave to soak for 10 minutes.
  2. Halve the onion and cut into strips. Cut the garlic into thin slices. Halve tomatoes. Heat oil in a pan. Sauté the onion and garlic in it over a medium heat until translucent. Stir in tomato paste and sauté briefly. Add the tomatoes, season with salt, pepper and a pinch of sugar and simmer over a medium heat for 5 minutes.
  3. Pluck the parsley and mint leaves from the stems and chop them. Crumble the feta. Fluff the couscous with a fork. Serve with the tomato mixture and sprinkle with feta, parsley and mint. Drizzle with 1 tablespoon of oil and pepper as desired.
