Ingredients

  • 500 g wheat flour type 550, stron for bakin
  • 10 g salt
  • 10 g olive oil
  • Oil, for the bowl
  • 7 ½ g sugar
  • 0.5 ½ cube yeast or 1 pack dry yeast
  • 360 ml water

Also:

  • 1 egg (s) mixed with water
  • Sesame or black cumin

Instructions

  1. Process these ingredients together into a very soft yeast dough and knead for about 8 minutes. Let rise in a lightly oiled bowl for about 1.5 hours.
  2. Then tip the dough onto a floured work surface and divide it into approx. 400 g portions (just cut in half with this amount of ingredients).
  3. Carefully bring the dough pieces into a somewhat oval shape WITHOUT expelling too much gas from the dough pieces. Cover and let rest for 20 minutes. Now shape each dough piece into an oblong or oval shape as desired and place on a baking sheet lined with baking paper. The dough can fill almost the entire width of the tray.
  4. Brush the loaves with a mixture of water and egg. Now press in deeply with your fingertips (until almost small holes appear) and sprinkle with sesame seeds or black cumin as required. Let it rest for another 20 minutes. Put in the oven preheated to 250 ° C and bake for about 7 - 9 minutes.
  5. Be careful not to bake too long, otherwise the bread will lose its characteristic crumb properties!
