Ingredients

  • 1 kg yoghurt, preferably Greek mixed with sheep`s cheese yoghurt
  • 1 cucumber (s)
  • 6 cloves garlic
  • some dill
  • 5 tablespoon olive oil
  • 1 teaspoon vinegar
  • 1 teaspoon salt

Instructions

  1. Peel the cucumber and cut it into small pieces. It is best to press the cucumber pieces firmly in kitchen paper until no more water comes out.
  2. Put the cucumber together with the pressed garlic cloves in a bowl, add the washed and finely chopped dill, salt, vinegar, oil and yoghurt and mix thoroughly.
  3. The tzatziki has to sit in the refrigerator for a few hours.
  4. I like it best with baguette and black olives.
  5. Incidentally, I got the recipe from a Greek living in France and the tzatziki is part of every barbecue here.
