Ingredients

  • 0.5 ½ cup almond sticks or chopped almonds
  • 1 handful almonds, unpeeled, whole
  • 3 banana (s), very ripe
  • 0.5 ½ cup coconut flour
  • 1 cup coconut flakes
  • 2 tablespoon maple syrup
  • 1 cup coconut water or coconut drink
  • 1 tablespoon psyllium husks
  • 1 teaspoon Baking powder
  • 1 pinch vanilla pod (s)
  • 1 cup oatmeal, fine
  • 1 teaspoon coconut oil
  • 1 tablespoon vegetable oil, e.g. sunflower oil
  • 1 pinch (s) salt

Vegan, Gluten-free Banana Bread

Instructions

  1. Mix and chop all ingredients in the food processor until a creamy mass is formed.
  2. Pour the mixture into a bread pan that has previously been lined with baking paper. Bake in the oven at 180 degrees for 20-25 minutes (browns slightly).
  3. Then take the banana bread out of the baking pan, turn it over and bake for another 30-35 minutes without the baking pan.
  4. You can mix it with blueberries or cranberries, for example, it also tastes delicious and is a good variation.
  5. For a healthy snack as breakfast or in between.
