Vegetable Sauté with Pumpkin

All the most useful and delicious vegetables combined with pumpkin are collected in this delicious and aromatic saute.

Servings: 4

Ingredients

  • Onions (cut into slices) – 1 pc.
  • Garlic (peeled) – 2-4 pcs.
  • Eggplant (diced) – 1 pc. (220 g)
  • Zucchini (cut into slices) – 2 pcs. (180 g each)
  • Pumpkin (peeled and cut into small pieces) – 300 g
  • Bulgarian pepper (seeded and cut into cubes) – 2 pcs.
  • Olive oil – 2 teaspoon
  • Fresh basil (torn) – 1 tbsp
  • Ground black pepper and salt to taste

How to make vegetable sauté

Directions

  1. Turn on the oven to preheat to 200 degrees. Put onion, whole garlic cloves, bell pepper, eggplant cubes, zucchini, and pumpkin into a large brazier, pour over with oil, mix well.
  2. Place the roasting pan in the oven and cook the vegetable sauté for about 35-40 minutes, until tender (stirring occasionally during cooking).
  3. Remove the roasting pan from the oven, add salt and pepper to the vegetable sauté, stir.

Serve the vegetable sauté on serving bowls, garnish with torn basil.
