Vegetable Sauté with Tofu Cheese

This vegetable sauté is cooked in a pan with the addition of tofu cheese.

Cook: 15 mins

Ingredients

  • Tofu cheese with spices – 400 g
  • Olive oil – 2 tbsp
  • Lemon juice – 2 tbsp
  • Salt – 1/2 teaspoon.
  • Red pepper (flakes) – 1/4 teaspoon.
  • Garlic (chopped) – 2 cloves
  • Zucchini (diced) – 1 pc.
  • Bell pepper (cut into thin strips) – 1 cup
  • Lemon wedges for garnish

Directions

  1. Wrap the tofu in a paper towel. Squeeze out the liquid well. Cut the cheese into cubes.
  2. In a bowl, mix 1 tbsp oils and the following 4 ingredients. Set aside.
  3. Heat 1 tablespoon over medium heat in a skillet. l. oils. Pour cheese, zucchini and bell pepper into a hot frying pan. Fry for 8-10 minutes.
  4. Add the oil mixture, fry, stirring occasionally, for 1 minute.

Serve with lemon wedges.
