Ingredients
- 50 g onion (s)
- 3 clove (s) garlic
- 100 g almond (s)
- 100 g Gouda
- 70 g breadcrumbs
- 1 teaspoon herbs Provence, oregano or similar
- 2 egg (s)
- 1 tablespoon soy sauce
- 1 liter vegetable stock
- some butter

- Peel and finely chop the onions and garlic. Chop the almonds and Gouda cheese. I do this in a moulinette, but I can certainly use a mixer or something similar.
- Mix the raw onions and garlic with the Gouda cheese and almonds. Add the breadcrumbs, herbs, eggs and soy sauce and knead everything together well. Shape the dough into walnut-sized balls and let them simmer in the vegetable stock for 6 minutes.
- Take the Köttbullar out of the broth with a slotted ladle and fry it in a pan with butter for a few minutes until crispy.
- I made a vegetable sauce with carrots, celery, onions, white wine and cream and served it with mashed potatoes.
- You should definitely make a sauce, otherwise it is a little too dry.
