Ingredients
Whole grain flour – 190 g
Butter (chilled) – 50 g
Brown sugar – 90 g
Honey – 60 g
Milk – 70 ml
Salt – 1 pinch
Baking powder – 1/2 teaspoon
Vanilla sugar – 10 g
Directions
We take the butter out of the refrigerator just before use. Instead of Graham’s special flour, use plain whole grain flour. You can add bran to it or, to make the cookies softer, ordinary wheat flour.
Melt the honey over low heat in a saucepan.
Pour milk into a saucepan with honey and mix.
Pour flour, two types of sugar (brown and vanilla), baking powder and salt into a bowl.
We mix.
Cut the cooled butter into pieces and add to the dry ingredients.
Rub it into crumbs with our hands.
Pour the honey-milk mixture into the resulting crumb.
Knead the elastic dough. Roll the dough into a ball, wrap with cling film and put in the refrigerator for thirty minutes.
After a while, turn on the oven to heat up to 180 degrees. Roll out the cooled dough with a rolling pin into a layer 3 mm thick.
Using a knife, cut a layer of dough into rectangles (about 4×6 cm), which we put on a baking sheet, previously covered with food parchment. We prick each cookie blank with a fork.
We bake whole grain crackers with honey in a preheated oven for 20-25 minutes. Ready-made Graham crackers can be served immediately with tea or used to make a cheesecake base.
