Divide the cleaned cauliflower (washed and patted dry) into florets.
Put the florets in a blender and chop on high. Best in 2 to 3 smaller portions, depending on the mixer. Make sure that the grains are not mushy but are roughly the size of rice grains.
Place in a microwave-safe bowl and cook covered for about 5-8 minutes (depending on the power of the microwave) at full power. Attention! no water is added. Shake briefly once after about half the time. At the end of the cooking time, season with butter, salt and nutmeg.
Goes particularly well with dishes with a lot of sauce.
Covering in the MW is important, otherwise too much of the moisture from the cauliflower will be lost.
