Ingredients

  • 1 aubergine (s), diced, 2 cm in size
  • 1 zucchini, diced, 2 cm in size
  • 0.5 ½ onion (s), finely chopped
  • 2 cloves garlic, crushed or sliced
  • 1 green pepper (s), diced
  • 1 large tomato (s), diced, preferably skinless
  • 2 teaspoons paprika powder, noble sweet
  • a bit salt
  • Pinch pepper
  • 3 tablespoon olive oil

Instructions

  1. Fry the aubergine cubes and the finely chopped onion in olive oil for about 2 minutes, then season with salt and pepper, add the paprika and deglaze with a large glass of water. When the water boils, add the rest of the ingredients (tomatoes, green peppers, zucchini cubes and garlic).
  2. Possibly add some more water, the vegetables should be covered. Cook for 5 minutes with the lid closed and then simmer until all the water is used up and a kind of porridge remains. Season a little to taste.
  3. It also tastes super cold!
  4. I like it cold for grilling in summer, or with fresh flatbread.
