Classic Ratatouille

Ratatouille is a recipe for a win-win summer side dish. Ratatouille is also good as an independent dish.

Servings: 4

Ingredients

  • Zucchini – 1 pc.
  • Eggplant – 1 pc.
  • Tomatoes – 3-4 pcs.
  • Garlic
  • Olive oil

Directions

  1. Cut the courgettes and eggplants into slices.
  2. Tomatoes too.
  3. Toss vegetables with salt and chopped garlic.
  4. Place everything in a round baking dish. Add Provencal herbs and olive oil. Bake in the oven at 180-190 degrees for about an hour (or until the vegetables are desired).
