African Yellow Rice

Cooking South African Yellow Rice Today. Suitable for a variety of everyday menu

Ingredients

  • Basmati rice 2.5 cups
  • 1/2 cup raisins
  • 4 cups water
  • Turmeric 1 teaspoon
  • Cinnamon stick 1 pc
  • Salt 1 pinch

Directions

  1. Soak the raisins in water for 20 minutes, then dry
  2. Bring water to a boil over medium heat. Add all ingredients, including raisins, and bring to a boil again.
  3. Reduce heat to low, cover tightly, and simmer for 15-20 minutes.
  4. Remove from heat, set aside for another 15 minutes. Remove the cinnamon stick, beat with a fork, add 1-2 tablespoons of oil.
  5. Serve hot with bobotie.
