Ingredients
For the sauce:
- 4 tablespoon soy sauce, dark
- 2 tablespoon rice vinegar
- 4 teaspoons rice wine, Chinese or sherry
- 2 tablespoon sugar
- 6 tablespoon chicken broth, or water
- 2 tablespoon ginger, grated
- 4 teaspoons garlic, finely chopped
- 4 teaspoons cornstarch
- water, for the cornstarch
- 5 chilli pepper (s), red, finely chopped
Moreover:
- 2 chicken breasts
- 1 tablespoon soy sauce, dark
- 1 egg (s), whisked lightly
- Pepper, to taste
- 1 teaspoon cornstarch
- 700 ml oil, preferably peanut oil

- Mix all the ingredients for the sauce. Heat. Thicken with mixed cornstarch.
- Cut the chicken breasts into bite-sized pieces. Mix the egg, soy sauce, pepper and cornstarch and turn the meat in it. Pour the oil into a wok or saucepan, heat it up and add the chicken pieces, deep-fry until they are cooked through and crispy. Remove and drain. Serve with the sauce.
- Rice or noodles go well with it.
