Ingredients

  • 2 ½ kg beef brisket
  • 110 g suar, brown
  • 1 stick cinnamon, broken into pieces
  • 1 teaspoon mustard seeds
  • 1 teaspoon peppercorns, black
  • 8 clove (s)
  • 8 grains allspice
  • 12 juniper berries
  • 2 bay leaves, a little crumbled
  • 0.5 teaspoon ½ ginger powder
  • 1 small onion (s), cut into quarters
  • 1 large carrot (s), roughly chopped
  • 1 stalk / n celery, roughly chopped
  • water

Instructions

  1. Preheat the oven to 175 degrees C top / bottom heat.
  2. Put the beef brisket in a roaster, sprinkle with the spices and sugar. Add enough water to just cover the brisket. Put the lid on and bake in the oven for 2 1/2 hours.
  3. After that there are 2 variants.
  4. Version 1:
  5. Take the roast out of the roaster, let it cool and then cut it into slices and use it for a Reuben sandwich (among my recipes).
  6. Variant 2:
  7. Take the roast out of the roaster, let it rest a little and serve with steamed white cabbage and mashed potatoes.
