Ingredients

For the dough:

  • 300 grams flour
  • 100 g butter
  • 1 teaspoon salt
  • 100 ml water

For covering:

  • 250 g cheese, Appenzeller
  • 50 g onion (s)
  • 20 g butter
  • 2 egg (s)
  • 150 g cream
  • 0.5 teaspoon ½ anise, ground
  • 0.5 teaspoon ½ coriander, ground
  • salt and pepper
  • Grease 10 g butter, to form

Instructions

  1. Sieve the flour, add the cold butter in flakes, sprinkle salt over it and add the cold water. Knead immediately and quickly into a shortcrust pastry. Chill the dough for about 30 minutes.
  2. For the topping, grate the cheese and dice the onion. Fry the onion in the butter until golden and then leave to cool. Whisk the eggs with the cream, add the grated cheese, onions, anise and coriander and season the mixture with salt and pepper to taste. Lightly grease a tart pan (approx. 30 cm). Roll out the shortcrust pastry into a suitable thin sheet and place in the pan. Pull up the edge a little and prick the dough several times with a fork. Put the cheese mixture on the dough, spread it well and bake in the preheated oven at 200 ° C for approx. 25-30 minutes. The cake is eaten hot.
