Ingredients

  • olive oil
  • 800 g pork fillet (s)
  • Salad, for garnish
  • salt
  • Black pepper
  • Sauce (salsa):
  • 2 mango (s)
  • 1 cucumber (s), Lebanese
  • 1 avocado (s)
  • 5 spring onions, cut into rings
  • 3 tablespoon lemon juice, freshly squeezed
  • 3 small chilli pepper (s), red, finely chopped
  • salt
  • Black pepper

Avocado – Mango – Salsa with Pork Tenderloin

Instructions

  1. Dice the mangoes, cucumber and avocado.
  2. Mix the salsa ingredients carefully and season to taste.
  3. Fry the fillets in oil for about 20 minutes on medium heat on all sides and then let rest for 5 minutes. Cut into thick slices.
  4. Serve on a salad, with baguette or ciabatta.
