Barley Porridge with Mushrooms in a Slow Cooker

Barley is a healthy cereal. It has a cleansing effect, improves metabolic processes in the body, and has a positive effect on the work of all organs. It makes the skin smooth and soft and affects the health of teeth, hair, and nails. Such a side dish will go well with fish and meat. If you cook barley porridge according to this recipe, then it can be a separate dish that will be appreciated.

Cook: 1 hour 15 minutes

Ingredients

  • Pearl barley – 1 glass
  • Carrots – 1 pc.
  • Celery root – ½ pc.
  • Bulb onions – 1 pc.
  • Champignon mushrooms – 9-10 pcs.
  • Chicken broth – 1 l
  • Sweet pepper (frozen) – 2 tbsp
  • Dried dill – 1 tbsp
  • Dried parsley – 1 tbsp
  • Bay leaf – 2 pcs.
  • Vegetable oil – 2 tbsp
  • Salt – 1 teaspoon
  • Ground black pepper – 1/2 teaspoon
  • Ground red pepper – to taste
  • Fresh herbs – optional

Directions

  1. Prepare products for cooking pearl barley porridge with mushrooms in a multicooker. Rinse the pearl barley well, add cold water, and leave for several hours or overnight in water to swell. Drain the water, rinse the cereals well again.
  2. Peel the carrots and cut them into strips.
  3. Peel the celery root and rub it on a coarse grater.
  4. Peel the mushrooms from the top film and cut them into cubes.
  5. Peel the onion and cut into medium cubes.
  6. Pour vegetable oil into the multicooker bowl, add carrots, onions and mix slightly. Season with salt and black pepper. Pour pearl barley.
  7. Then add celery root, mushrooms, bell pepper, red ground pepper, bay leaf, and dried herbs (dill, parsley).
  8. Pour chicken broth over everything. The liquid should cover vegetables and cereals by 1.5-2 centimeters. Place the bowl in the multicooker. Select the Buckwheat program from the menu. Turn on for cooking.
  9. Serve the prepared pearl barley porridge with mushrooms to the table, decorate with fresh herbs. The openwork cheese chip also looks beautiful.
