Bean Cakes with Chocolate, Nuts and Dates

Bean cakes with chocolate, nuts, and dates are, at first glance, a very unusual dessert. Even if you are confused by the use of beans in a recipe, you should definitely try this delicacy. The beans are not felt absolutely – the cakes are delicious, tender, with a rich chocolate-nut aroma. A base of dates and walnuts adds a bright sweetness.

Ingredients

  • Red beans – 220 g
  • Dates – 160 g
  • Roasted cashews – 130 g
  • Dark chocolate – 100 g
  • Powdered sugar – 100 g
  • Walnuts (kernels) – 50 g
  • Cocoa powder – 10 g
  • Vanillin – 1 pinch

Directions

  1. We pre-wash the beans and soak them in cold water for 5-8 hours.
  2. Then we drain the water, rinse the beans again and fill them with water again so that the beans are covered by 2 cm. Boil the beans until tender. This usually takes 50-60 minutes. Let the beans cool.
  3. We turn on the oven to heat up to 170 degrees. Dry the walnuts in the oven for 10 minutes.
  4. Grind the cashews into crumbs in a blender. Set aside 20-30 g of crumbs, you will need it for decoration.
  5. Pour boiling water over the dates, remove the seeds.
  6. Cut the dates into small random pieces.
  7. Grind the dried walnuts in a blender.
  8. We combine dates and walnuts.
  9. Mix well the date-nut mass.
  10. We puree the cooled beans with a submersible blender or a crush.
  11. Melt the chocolate in the microwave (in a suitable container) at minimum power or in a saucepan over low heat.
  12. Combine in a deep bowl mashed beans, chocolate (you can leave some chocolate for decoration), cashews, powdered sugar, cocoa powder, vanillin.
  13. We knead well.
  14. Fill the muffins with the resulting mass. I use silicone and foil molds.
  15. We make a “lid” from the date-nut mass, repeating the shape of the molds used.
  16. We send the cakes to the freezer for 40-60 minutes.
  17. After this time, we remove the cakes from the molds. Roll the cashews in the remaining crumb, spread on the surface with the date-walnut side (it serves as the base of the cakes). You can decorate the cakes if you like. I used melted dark chocolate.
