Beef Kharcho Soup with Adjika

Of course, Georgian cuisine is something special. Famous Georgian dishes are loved by all of us. Among them is kharcho soup. There are different versions of the kharcho recipe. And this is the simplest recipe for kharcho beef soup that does not pretend to be a classic, so to speak, a quick lunch πŸ™‚

Servings: 8

Ingredients

  • Beef brisket – 600 g
  • Water – 2.5 l
  • Rice – 0.5 cups
  • Bulb onions – 1-2 pcs.
  • Vegetable oil – 4 tbsp
  • Bay leaf – 1-2 pcs.
  • Adjika – 2-3 tbsp
  • Fresh herbs (parsley, cilantro) – 1 bunch
  • Garlic – 2-3 cloves
  • Salt – 1 tbsp
  • Pepper – 1 pinch

Directions

  1. Products for kharcho beef soup in front of you.
  2. Wash the meat, pour cold water. Bring to a boil (remove noise). Cook covered over low heat until tender (60-90 minutes).
  3. Rinse the rice well. When the meat is almost ready, send the rice to the pan. Cook for 20 minutes.
  4. Meanwhile, peel the onions, wash and chop finely.
  5. Peel the garlic. Crush in garlic or chop finely with a knife.
  6. Wash greens and chop finely.
  7. Preheat a frying pan. Pour in vegetable oil. Put the onion in hot oil. Fry the onions over medium heat, stirring occasionally, for 3-4 minutes.
  8. Dip the onion into the saucepan. Season with salt and pepper, add bay leaf.
  9. Open a jar of homemade adjika.
  10. Add adjika and garlic to the soup. Remove soup from heat. Let it brew for 10 minutes. Beef kharcho soup with adjika is ready. Add fresh herbs to the soup before serving.
  11. Beef kharcho soup can be served.
