Beef Stew with Mushrooms and Bacon

We invite you to cook a very tasty beef stew with the addition of wild mushrooms. And the divine aroma of this dish will be added to spices, rosemary, and, of course, bacon.

Ingredients

  • Beef (pulp) – 400 g
  • Boletus mushrooms, frozen or fresh – 250 g
  • Bulb onions – 1 pc. (220 g)
  • Carrots – 1 pc. (207 g)
  • Garlic – 2 cloves (20 g)
  • Bacon – 60 g
  • Wheat flour – 1 tbsp (12 g)
  • Red wine – 150 ml
  • Tomato paste – 1 tbsp (20 g)
  • Rosemary – 3 sprigs (7 g)
  • Bay leaf – 2 pcs.
  • Salt to taste
  • Ground black pepper – to taste
  • Ground red pepper – to taste
  • Olive oil – for frying
  • Greens – optional
  • Beef broth – 400 ml 

For broth:

  • Beef (brisket on the bone) – 1 pc. (360 g)
  • Beef (pulp) – 300 g
  • Bulb onions – 1 pc. (100 g)
  • Carrots – 1 pc. (50 g)
  • Black peppercorns – 3 pcs.
  • Allspice peas – 3 pcs.
  • Celery stalk – 67 g
  • Parsley root – 9 g
  • Water – 4 l

Directions

  1. First, let’s prepare the broth, this can be done the night before. Wash the meat, dry it and clean it from fat, hymen, and tendons. If the piece of meat on the bone is large, cut it into 2 pieces. Cut the pulp into pieces.
  2. Put the prepared meat in a medium saucepan and pour 1 liter of water.
  3. The first broth turns out to be very cloudy, so drain it 5 minutes after boiling. We wash the meat. My pot.
  4. Peel the onions and carrots. Wash the celery stalk and cut it in half. We peel the parsley root as well. Put one onion, one carrot, celery, and parsley root in a saucepan with the meat. Add the peppers.
  5. Pour 3 liters of water into a saucepan with meat and bring to a boil. Cook the broth over medium heat for 1.5-2 hours, until the meat is tender (soft). Strain the broth through cheesecloth and salt to taste. The output is 1.2-1.5 liters of finished broth. Broth meat can be used in other dishes.
  6. Now we are preparing the main dish – stew. Wash the beef, cut it into cubes with a side of 2-3 cm. Roll the meat in flour.
  7. Put the meat in one layer in a preheated frying pan with olive oil and fry over high heat until golden brown. So, in parts, fry all the meat. Set the fried meat aside.
  8. Cut the remaining carrots and onions into small cubes. We also cut the bacon into cubes. Peel the garlic and chop finely. If the mushrooms are large, then cut them in half.
  9. Put the bacon and onion in a preheated frying pan with olive oil and fry for 3 minutes, until the onion is transparent.
  10. Add carrots, mushrooms, and garlic to the pan. Cook for another 5 minutes. We turn on the oven to preheat to 200 degrees.
  11. Pour wine into the pan and bring to a boil.
  12. After the wine has evaporated, add the roasted beef and tomato paste.
  13. Stir and pour in half of the broth, bring to a boil again.
  14. Put the contents of the pan into a fireproof dish. Add rosemary, bay leaves, salt, and black and red peppers. Pour in the remaining broth.
  15. Close the lid and cook the beef stew with wild mushrooms and bacon in the oven at 200 degrees for about 1.5 hours, until the meat is tender (soft).
  16. Beef stew with mushrooms is ready!
