  1. Cut the eggplants into thin circles and fry in a little oil on both sides.
  2. Cut the bread into slices and dry on the grill/oven/toaster
  3. Rub the bread with garlic
  4. Cut the tomatoes into slices or whatever you want) If you are not lazy, you can peel them first.
  5. Place circles of eggplant, tomatoes, and mozzarella slices on the bread.
  6. For the dressing, mix lemon juice, or oil, salt, and pepper.
  7. Drizzle over the bruschetta dressing and sprinkle with the selected herbs on top.
