Butter Rolls with Cottage Cheese and Raisins

One of the most popular baking recipes, at least in our family. Buns that are eaten in a minute. Never tried them the next day. The dough is like fluff, the filling is like cream! Cook to your health and enjoy!

Ingredients

For the dough:

  • Milk – 250 ml
  • Butter – 50 g
  • Pressed yeast – 10 g
  • or dry yeast – 1 teaspoon without top
  • Flour – 420 g
  • Sugar – 2 teaspoon
  • Vanilla sugar – 1 teaspoon
  • Salt – 1 pinch

For filling:

  • Cottage cheese – 300 g
  • Raisins – to taste
  • Vanilla sugar – to taste
  • Sugar to taste

For lubrication:

  • Yolk – 1 pc.
  • Milk – 1 tbsp

Directions

  1. We activate the yeast (quick brew).
    Pour flour into a larger bowl, make a depression.
  2. Pour warm milk into the depression, add sugar, crumbling yeast. Stir lightly and leave for 10-15 minutes.
  3. Lightly melt the butter in the microwave or in a water bath.
    Add salt to the dough and knead for a few minutes.
  4. When the dough comes together in one lump, add oil and knead for 10 minutes.
  5. The dough is soft, elastic, non-sticky. Cover it with cling film and leave it in a warm place for 1 hour.
  6. When the dough is about to stand, you can prepare the filling.
  7. Scald the raisins with boiling water.
    Add sugar to taste, vanilla sugar and yolk to the curd.
    Knead-grind everything with a fork.
  8. Add raisins and mix everything well.
  9. Knead the finished dough.
    Divide the dough into 10 equal parts. We round off the dough pieces and cover with foil, let them rest for 10 minutes.
  10. Roll each part of the dough into small cakes.
    Cut the cakes in half.
    On the edge of the semicircle blank, lay out 1 tbsp of curd filling with raisins.
    At the end of the dough piece for beauty, we make several cuts along.
    We form rolls-rolls – wrap the filling tightly.
  11. Cover the bottom of the baking dish (I have a diameter of 24 cm) with parchment, grease with a small amount of vegetable oil. We spread the buns into a mold.
    We turn on the oven to heat up to 180 degrees.
    We give the buns a good rise – about 20 minutes under the film.
    Lubricate them with yolk, shaken up with milk, and send them to a preheated oven.
  12. We bake buns-rolls with cottage cheese and raisins at a temperature of 180 degrees, about 15 minutes (focus on your oven).
    When the buns with cottage cheese and raisins are baked, you need to remove them from the oven and cover them with a towel for just a few minutes.
