Sugar – 300 g (according to the recipe 420 g, but this is for a sweet tooth)
Separate the yolks from the whites, try not to get the fat of the yolk into the protein, otherwise, they will not foam up.
Place the butter in a bowl suitable for a water bath. Add half the sugar and cocoa powder.
Place the bowl in a water bath, heat until the sugar dissolves.
Then add the yolks and stir constantly until thickened.
Remove the chocolate cream from heat and chill slightly.
Place the walnuts in a blender and chop finely.
Beat the whites with a mixer or in a food processor until they are firm. Add the remaining granulated sugar and beat again until the sugar dissolves.
Spoon the walnuts into the whipped egg whites.
Put parchment paper on a baking sheet, grease it with oil and place 2 tablespoon. tablespoons of protein mass, spreading it thinly (0.5-0.7 cm), in the form of a cake layer of the desired size.
Bake the meringue cake in an oven preheated to 200 degrees for 5-7 minutes, until lightly browned. It will be slightly sticky on top.
Remove the meringue cake from the parchment and brush immediately with chocolate cream.
So bake all the cakes (I got 6 pieces with a diameter of 18 cm), laying one on top of the other directly hot, pressing each one a little with your hands.
After placing the last cake layer, coat the entire Garash cake with the remaining cream, sprinkle with coconut, and refrigerate for 3-5 hours.
