When baking, the Magic Cake itself is divided into 3 layers – an airy sponge cake, a liquid custard, and a thicker custard. Anyone who loves custard and soft biscuits will love this dessert. Very tasty, tender, the pie just melts in your mouth! I cooked it for the first time, and everything worked out for me.
Ingredients
Large eggs C0 (room temperature) – 4 pcs.
Butter 82% fat (melted) – 115 g + for greasing the mold
Milk (warm) – 500 ml
Sugar – 130 g
Vanilla sugar (be sure to add) – 20 g
Flour – 115 g
Salt – 1 pinch
Water – 1 tbsp
Directions
Carefully divide the eggs into whites and yolks. The yolk should not get into the egg whites, otherwise, it will be difficult to beat them. Combine the yolks with sugar and vanilla sugar (be sure to add vanilla sugar, it acts as a flavoring agent for the dough, and the finished cake will not have an egg flavor). Beat until light and fluffy. In the process, pour in 1 tablespoon. a spoonful of water.
Add sifted flour to the whipped yolks in parts, stirring well (you can use a mixer).
Pour in melted butter (room temperature, not hot), stir.
Add warm (required!) Milk, stir until smooth.
Add salt to the egg whites and beat until firm white mass. (The whisk and dishes must be absolutely clean and free of fat.)
Add the beaten egg whites in several passes to the main dough, stirring with a whisk. Do not stir too much; some flakes of whipped proteins may remain on the surface.
Prepare the form – it must be whole since the dough is thin. Grease the bottom and sides of the mold (I have a mold with a diameter of 21 cm) with butter. Pour the dough into a mold. Bake the magic pie (smart cake) in an oven preheated to 170 degrees (top-bottom mode), at a slightly below-average level, 50-60 minutes. The cake is ready when the top is well browned (I baked the cake for 50 minutes, the last 10 minutes – under foil). Let the cake cool in the form to room temperature. As it cools, the cake will settle slightly.
The cooled three-layer cake can be taken out of the mold and everyone can be invited to tea.
