Caviar from Сarrot Сake and Tomatoes (in a Slow Cooker)

I don’t know about you, but I’m terribly sorry to throw away the carrot cake after the juicer! Casseroles, etc., of course, an option, but there is still an idea)) Vegetable caviar, from carrot cake and tomatoes, for the winter!

Cook: 1 hour 30 mins

Ingredients

  • Carrot cake – about 2 kg
  • Tomatoes – 2 kg
  • Large onions – 3 pcs.
  • Garlic – 1 head
  • Salt – 3 tablespoons
  • Sugar – 2-3 tablespoon.
  • Ground black pepper
  • Vinegar 9% – 1 tablespoon

Directions

  1.  Place the carrot cake in a slow cooker.
  2.  Grind tomatoes and onions in a food processor. Add salt, sugar and pour into a slow cooker to the carrots.
  3.  Stew carrot cake and tomato caviar in a slow cooker for about an hour.
  4.  Add chopped garlic and freshly ground black pepper to taste a few minutes before the end. Probably you can play with spices/herbs as you like.
  5. At the end, add vinegar, mix and spin vegetable caviar from carrot cake and tomatoes (for the winter) into sterilized jars.
