Ingredients

  • 1 celeriac
  • 2 tablespoon vegetable broth
  • water
  • some soy flour
  • some breadcrumbs
  • oil

Instructions

  1. Peel the celeriac and cut into slices about 8 mm thick.
  2. In a pot, heat the vegetable broth and water over medium heat.
  3. Cook the celeriac slices in the liquid for 4-6 minutes until tender.
  4. Remove the slices and set aside to cool slightly.
  5. Mix the soy flour with some of the warm cooking liquid to form a thick, sticky paste.
  6. Coat each celeriac slice with the soy flour paste.
  7. Roll the coated slices in breadcrumbs until fully coated.
  8. Heat oil in a frying pan over medium-high heat.
  9. Fry the breaded celeriac until golden brown on both sides, about 2-3 minutes per side.
