Chicken chakhokhbili garnished with basmati rice.

  • Chicken – 600 g (half chicken)
  • Bow – 3 heads
  • Tomatoes – 4 pcs.
  • Tomato paste – 1.5 tbsp
  • Garlic – 3 cloves
  • Butter – 10 g
  • Adjika pepper – 1 teaspoon
  • Parsley – 3 sprigs
  • Dill – 2 branches
  • Cilantro – 3 branches
  • Tarragon – 2 branches
  • Hops suneli – 0.5 teaspoon.
  • Condari – 0.5 teaspoon
  • Coriander – 1 teaspoon
  • Utskho suneli – 0.5 teaspoon.
  • Basmati rice – 1 cup


How to cook chicken chakhokhbili:

  1. Chop the chicken into medium pieces, place in a heavy-walled saucepan and cook, covered over medium heat, without any oil.
  2. After 10 minutes, the chicken will give juice, which we must drain into a bowl so that it does not evaporate. We use this juice in the final.
  3. Next, add chopped onions, a piece of butter to the chicken, and cook, no longer closing the lid, for 10 minutes.
  4. Scald tomatoes with boiling water, peel them off, cut into small squares, add to onions and chicken. Top – tomato paste, adjika pepper, salt to taste. Reduce heat, cover, and simmer chakhokhbili for 20 minutes.
  5. Next, add spices, add finely chopped garlic, herbs, chicken juice, cover with a lid and remove the chakhokhbili from the stove. Boil rice according to your favorite method.
