Carrot Garnish

Carrots are stewed in a spicy marinade and served hot. Such a side dish is well served with fried meat.

Ingredients

  • Orange – 1 pc.
  • Lemon – 1 pc.
  • Carrots (chopped on a coarse grater) – 5 cups
  • Sugar – 3/4 cup
  • Apple cider vinegar – 3/4 cup
  • Water – 1.5 cups
  • Coriander seeds (crumbled) – 1.5 teaspoon
  • Mustard seeds (crumbled) – 1.5 teaspoon.
  • Salt – 1.5 teaspoon.

Directions

  1. Using a vegetable peeler, remove the zest from the citrus fruits and cut into thin strips with a knife. Also, squeeze the juice out of citrus fruits.
  2. Put chopped carrots in a large saucepan, pour citrus juice, water, vinegar, add sugar, coriander, mustard, and salt, mix well. Put a saucepan over medium heat, bring the mixture to a boil. Cook the carrot garnish in the marinade for about 45 minutes (the marinade should turn into syrup).
  3. A ready-made garnish of carrots is served hot, with meat dishes.
