Garnish “Duchess” of Potatoes

Often, the main attention of the hostess when preparing the festive table is paid to the main dish, be it meat or fish. But the side dish can also look pretty and appetizing. I present to your attention the festive potato side dish “Duchess”.

Ingredients

  • Potatoes – 1 kg
  • Hard cheese – 50 g
  • Chicken eggs (yolks) – 2 pcs.
  • Nutmeg – on the tip of a knife
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Prepare all the ingredients according to the recipe for a potato side dish. Ideally, the cheese should be expensive flavored varieties, such as parmesan or sheep, but ordinary Russian will be good in this dish.
  2. Pour water over the peeled potatoes so that they lightly cover them. Season with salt and boil until tender.
  3. While the potatoes are cooking, finely grate the cheese.
  4. After the potatoes are boiled, drain all the water from the pot and mash the potatoes.
  5. Add cheese and stir. Add 1 egg yolk, nutmeg, salt, and black pepper there. Stir again until smooth.
  6. Transfer the warm potato mass into a piping bag or syringe with a curly nozzle. It is better to do this right away since the cooled potatoes are very hard to squeeze through the opening of the syringe.
  7. Squeeze small curly roses onto a baking sheet lined with parchment.
  8. The second type of mashed potato garnish can be made in the form of round medallions.
  9. Gently brush the surface of the roses with a second yolk with a culinary brush.
  10. Also, brush the surface of the potato medallions with the yolk.
  11. Bake the potato and cheese garnish in an oven preheated to 200 degrees until browning, 15-20 minutes.
  12. The festive Duchess potato side dish is ready. Serve the potato side dish with the main course immediately.
