Chicken Chakhokhbili (in the oven)

Chicken chakhokhbili is a very tasty and easy-to-prepare Georgian dish. Chicken stewed with onions, tomatoes, herbs, and garlic turns out to be very juicy and aromatic, in a rich sauce. There are many variations of this dish, I will share one of the recipes with you. All products are very affordable and are always in the kitchen.

Ingredients

  • Chicken thighs – 6-7 pcs.
  • Tomatoes – 4 pcs.
  • Tomato paste (if necessary) – 1 tbsp
  • Bulb onions – 4 pcs.
  • Butter – 15 g
  • Hops-suneli – 1 teaspoon
  • Salt to taste
  • Ground black pepper – to taste
  • Garlic – 3-6 cloves
  • Fresh cilantro – 1 small bunch
  • Fresh basil – 1 small bunch

Directions

  1. Season the chicken with salt and pepper.
  2. Cut the tomatoes crosswise and pour boiling water over for 1 minute.
  3. Peel the onion and cut into thin quarters.
  4. Remove the skin from the tomatoes. Cut the tomatoes into small cubes.
  5. Finely chop the greens.
    Peel and chop the garlic.
  6. Preheat a skillet and melt a small amount of butter. Place the chicken skin-side down in the pan. Fry the chicken until golden brown on each side.
  7. Add some more butter and onion. Fry the onion until transparent.
  8. Add hops-suneli and put tomatoes.
    If the tomatoes do not taste rich, add tomato paste.
  9. Stir well, salt and pepper. Simmer chicken with onions and tomatoes, covered, until tender, for 20-25 minutes.
  10. Add herbs and garlic, remove from the stove and let the chakhokhbili brew for 10-15 minutes.
