Chernihiv Borscht

Rich, aromatic, thick Chernihiv borscht is one of the most delicious Ukrainian borscht. It is impossible to cook a little borscht. Even if you take a little of everything – how many vegetables should be placed in the saucepan. But borscht is never too much. Everyone eats delicious borscht with pleasure.

Ingredients

  • Meat with bone – 500 g
  • Potatoes – 400 g
  • White cabbage – 400 g
  • Beets – 350 g
  • Zucchini – 200 g
  • Dry white beans – 0.5 cups
  • Tomatoes – 400 g
  • Tomato paste – 2 tbsp
  • Parsley root – 1 pc.
  • Carrots – 1 pc.
  • Onions – 100 g
  • Fresh sour apple – 1-2 pcs.
  • Butter or lard – 100 g
  • Water – 3 l
  • Parsley and dill greens – 1 bunch
  • Bay leaf – 2 pcs.
  • Salt to taste
  • Peppercorns – 5-6 pcs.
  • Freshly ground pepper – to taste
  • Sour cream – to taste
  • Pampushki with garlic

Directions

  1. Add water to the meat and bring to a boil. Remove the foam, reduce heat and cook with the lid ajar for 1.5 hours. Put bay leaf and peppers into the broth. Then we take the meat out of the broth, separate it from the bones, cut it into pieces and return it to the borsch at the end of cooking.
  2. While the broth is cooking, cook the vegetables. Peel and dice the potatoes. Peel the beets, onions, and roots. Cut the beets, carrots, parsley root, cabbage, and zucchini into small strips. Cut the onion into small cubes. Peel the apples and three on a coarse grater. But it is advisable to do this later so that the apples do not have time to darken or sprinkle them with lemon juice.
  3. Rub the tomatoes on a coarse grater to the skin.
  4. Simmer the beets in half the fat, stirring occasionally, add tomato paste and simmer a little more.
  5. In the second half of the fat, fry the onions, carrots, and parsley root.
  6. Add zucchini and fry, stirring occasionally, for 5-7 minutes.
  7. Put the potatoes in the boiling broth and as soon as it boils, add the cabbage. Cook for 10 – 15 minutes.
  8. Then add the beans with broth, fried vegetables, apples, tomatoes, stewed beets, salt to taste and cook for 10-15 minutes. In the end, sprinkle with finely chopped herbs. Borscht must be allowed to brew for 20-30 minutes.
  9. Put meat, sour cream on a plate with borscht, sprinkle with freshly ground pepper. Serve garlic donuts. Enjoy your meal!
