Ingredients

For the dough:

  • 30 g chia seeds
  • 50 g almond flour, de-oiled
  • 50 g pumpkin seed flour, de-oiled
  • 20 g oat bran
  • 50 g protein powder, neutral
  • 30 g xylitol (suar substitute)
  • 1 teaspoon baking soda or baking powder
  • 100 g low-fat quark or quark
  • 1 egg (s)
  • 130 ml water
  • 1 pinch (s) salt

For painting:

  • 2 tablespoon orange jam or apricot jam
  • 2 tablespoon water
  • 1 tablespoon brandy or rum

For covering:

  • 50 g butter
  • 30 g xylitol (suar substitute)
  • 1 packet vanilla sugar
  • 6 tablespoon water
  • 200 g hazelnuts, coarsely round

Instructions

  1. Mix the apricot or orange jam in a glass with about 2 tablespoons of water and 1 tablespoon of brandy and set aside.
  2. Mix the chia seeds, the flour, baking powder, xylitol, salt and egg white powder dry. Separately from the quark, egg and a pinch of salt, whisk well and then mix with the flour mixture to form a dough. Let the dough rest for about half an hour. Then spread it out on a baking sheet lined with baking paper and distribute it roughly. Cover with cling film and then roll out the dough. Remove the film again.
  3. Sprinkle the previously mixed apricot or orange jam over the dough and spread evenly to the edge.
  4. Preheat the oven to 180 degrees (convection).
  5. Melt the butter in a saucepan, add xylitol, vanilla sugar and about 6 tablespoons of water and bring to the boil briefly. Stir in the nuts (almonds). If the mixture is too firm, add 1 - 2 tablespoons of water and stir in well. Now spread the nut mixture evenly on the dough and press lightly.
  6. Bake at 180 ° C for about 25 - 30 minutes. Always check whether the pastries are not getting too dark.
  7. Cut into squares while still warm, and if you want the nut corners as triangles, cut diagonally into triangles. I`m usually too lazy for that, and that`s why my nut corners always have one more corner. First remove from the baking sheet when cold.
  8. And if you really want to have nut corners with chocolate corners, you just have to put chocolate icing on it. And of course more jam and more brandy can be used, but then things get tight with low carb. A wide variety of nuts and almonds can also be added. One person wants it sweeter, the other tart, you can play with xylitol as with sugar, everyone to their own taste, everyone as they want.
