Chicken Cutlets with Mushrooms (Without meat Grinder)

Chicken cutlets can be made without a meat grinder. If you finely chop the chicken fillet and add a couple of tablespoons of mayonnaise, the chicken pancake cutlets will turn out juicy, tasty. Chopped chicken cutlets with mushrooms fried with onions will be even tastier.

Servings: 7

Ingredients

  • Chicken breast fillet – 500 g
  • Champignons – 200 g
  • Eggs – 2 pcs.
  • Bulb onions – 1 pc.
  • Starch – 2 tbsp
  • Mayonnaise – 2 tbsp
  • Garlic – 2 cloves
  • Nutmeg – 1/2 teaspoon
  • Cilantro – 1 bunch
  • Salt to taste
  • Pepper to taste
  • Vegetable oil – for frying

Directions

  1. Wash and dry the chicken fillet. Cut into small cubes.
  2. Place the sliced ​​chicken fillet in a deep bowl. Chop cilantro or other herbs finely and send to a bowl with chicken. Add eggs and spices here: salt, pepper, nutmeg. Mix everything well
  3. Add mayonnaise, stir and leave to marinate for chicken cutlets.
  4. Cut the champignons and onions into small cubes. Crush a clove of garlic with the wide side of a knife.
  5. Heat vegetable oil in a frying pan. Fry the garlic until golden brown and remove from the pan. Fry the onions until golden brown. Add the mushrooms to the pan with onions and fry until the moisture evaporates and light brown.
  6. Add ready-made mushrooms with onions to the minced meat, mix. Add starch and mix well again. Cover with plastic wrap and refrigerate for 1-2 hours. But you can fry chopped chicken and mushroom cutlets after 10 minutes, waiting until the starch absorbs moisture.
  7. Such “lazy” cutlets do not need to be shaped and rolled in flour, but simply put the minced meat in the pan with a spoon, as for pancakes, and fry the quick chicken cutlets until golden brown.
  8. Chopped chicken cutlets with mushrooms are ready. They can be served with mashed potatoes.
