Chicken in a Spicy Marinade with Vegetables and Beans

At first glance, this method of cooking chicken seemed to me unusual, but it is so delicious that now this recipe is one of my favorites! The originality of the recipe is that it uses cinnamon, chili, and cumin. With these spices, a chicken marinade is prepared. In parallel with baking the chicken, prepare a vegetable garnish with beans.

Ingredients

  • Chicken thighs – 3 pcs.
  • Canned beans – 1/2 can (100 g)
  • Zucchini or zucchini – 150 g
  • Tomato (large) – 1 pc.
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Garlic – 1 clove
  • Cumin – 1/2 teaspoon
  • Ground cinnamon – 1/2 teaspoon
  • Ground chili pepper – 1/2 teaspoon
  • Vegetable oil – 40 g
  • Salt to taste

Directions

  1. We will prepare all the ingredients, do not forget about the spices, they will give that bright taste to the dish, from which it is impossible to tear yourself away. For this recipe, you can use chicken thighs or drumsticks, whichever you prefer.
  2. How to cook spicy marinade chicken with vegetables and beans:
  3. Finely chop a clove of garlic and grind it in a mortar with caraway seeds.
  4. Pour 1 tablespoon into a container. a spoonful of vegetable oil, add garlic pounded with caraway seeds, as well as cinnamon, chili and salt. Let’s mix.
  5. We immerse pieces of chicken in the resulting marinade, coat them with marinade on all sides. Let the chicken thighs marinate for 10-15 minutes.
  6. While the meat is marinating, prepare the vegetables for a side dish. Finely chop the onion and carrot into thin cubes.
  7. In the remaining vegetable oil, begin to fry the onions.
  8. Let’s add carrots to it.
  9. While they are fried, cut the zucchini into thin slices. (If you don’t have zucchini, you can safely replace them with zucchini or a stalk of celery. There are no restrictions on the vegetables used.)
  10. Send the zucchini to the pan with the onions and carrots, continue to fry.
  11. Meanwhile, peel the tomato and cut it into small cubes. (Instead of fresh tomatoes, you can use canned tomatoes in your own juice.) Also, put it in the pan.
  12. Put the marinated chicken thighs in a mold and put them in a preheated oven to bake at 180 degrees.
  13. We continue to cook vegetables in a pan until tender, adding a little water.
  14. At the very end, add beans to the pan, it will add satiety to the side dish.
  15. Finally, add salt to taste and turn it off. The vegetable side dish with beans is ready.
  16. While the garnish was being prepared, the chicken thighs were also baked in the oven, we take them out of the oven.
  17. Baked chicken with a vegetable side dish is a great hearty lunch or dinner.
