Chicken Meatballs with Pumpkin and Cheese in Tomato Sauce

An interesting recipe for making tender minced chicken meatballs with the addition of cheese and grated pumpkin. The meatballs are stewed in pumpkin sauce and tomato puree, due to which they become incredibly juicy. The sauce is obtained with a pleasant taste and aroma and harmonizes well with meatballs. In addition, the sauce will perfectly emphasize the taste of any side dish.

Cook: 1 hour

Ingredients

  • Chicken fillet – 250 g
  • Pumpkin – 250 g
  • Hard cheese – 70 g
  • Oatmeal flakes – 1 tbsp
  • Onions – 50 g (0.5 pcs.)
  • Fresh parsley – 4 g (1-2 sprigs)
  • Tomatoes – 300 g (3 pcs.)
  • Egg – 1 pc.
  • Garlic – 1 clove
  • Sugar – 2 pinches
  • Salt – 2 pinches (to taste)
  • Ground black pepper – a pinch (to taste)
  • Vegetable oil – 2 tbsp

Directions

  1. Peel the onion. Chop the chicken fillet and peeled onion coarsely. Send the chicken and onion to the blender bowl. Using the “knife” attachment, slice into the minced meat.
  2. Cut the stems of the parsley and finely chop the leaves. Grate the cheese on a fine grater. Peel the pumpkin and the loose part with seeds and also grate on a fine grater. Divide the grated pumpkin into two parts. Set aside one part on a plate; you will need it to make the sauce.
  3. In a bowl, combine the minced chicken with onions, grated cheese and pumpkin, parsley and oatmeal. Beat in an egg, add a pinch of salt and ground pepper. Stir the meatballs.
  4. Rinse the tomatoes, put them in a bowl of boiling water for a minute. Then pour over the tomatoes with ice water, remove the skin. Chop the tomatoes coarsely, send to the blender bowl and twist in mashed potatoes. Heat the vegetable oil in a skillet, add the remaining pumpkin and fry for 1-2 minutes. Peel the garlic, finely chop and add to the pumpkin.
  5. Pour in tomato puree, add a little sugar and salt (pinch). Simmer the contents of the pan over low heat for 3-5 minutes. With your hands soaked in water, mold round meatballs from the minced meat (I got 11 pieces) and put them in the boiling sauce. Simmer the meatballs under a lid over low heat for 20 minutes, until tender.
  6. Serve ready-made chicken meatballs with pumpkin and cheese in vegetable sauce hot with any side dish. I have boiled rice. It will be delicious with boiled potatoes.
