Ingredients
For the dough:
Flour – 400 g
Salt – 1/4 teaspoon
Water (boiling water) – 100 ml
Warm water – 200 ml
Vegetable oil – 1 tbsp + for greasing and frying cakes
For filling:
Green onions – 2-4 pcs. (several feathers)
5 spice mix – 1 pinch
Salt – 1/2 teaspoon
Vegetable oil (hot) – 2-3 tbsp
Flour – 2 tbsp
For the 5 spice mix:
Sichuan pepper – 20 g
Star anise – 20 g
Cumin – 10 g
Ground cinnamon – 10 g
Dried garlic (powder) – 8 g
Directions
You will need two types of water to make tortillas – very hot and warm.
Mix flour with salt and pour boiling water. Mix immediately. Then pour in warm water. Knead the dough for 5-7 minutes, cover and let it rest for 20 minutes.
Now add vegetable oil to the dough and knead well. The dough will be velvety and elastic.
We divide the dough into equal pieces (ours – 140 g each, it turned out 5 pieces). Stretch each piece into a small blank and grease abundantly with vegetable oil. We leave all the blanks on a plate in vegetable oil, covered with foil. Let the dough stand for 1-1.5 hours.
Time has passed, it’s time to start preparing the filling-shaving brush for flat cakes. This shaving brush is considered traditional in many Asian dishes, it gives a layer of dough. If you do not have a ready-made “5 spice” mixture, then you need to crush the spices listed in the product list in a mortar.
Finely chop the green onion.
Mix onion, flour, spice mixture and salt. Fill everything with hot oil, mix quickly, and the shaving filling is ready.
Roll out dough blanks into strips of the same thickness. Apply the prepared filling on top, about 0.5 tablespoon each.
We fold the strip, try to expel the air with our hands.
At the very end, roll up the side edges with a rolling pin, which we then lay on top of each other.
Cover with the top edge, pulling a little, the future cake.
Now gently form a cake with our hands and a rolling pin. The dough is very pliable and a pleasure to work with!
