Cinnamon and Coffee Glaze Muffins

Recipe for making muffins with cinnamon, butter, icing sugar and coffee and butter cream. This recipe will make 12 muffins.

Servings: 4-6

Ingredients

  • Baking powder – 1 1/2 Teaspoons
  • Salt – 1/2 Teaspoon
  • Eggs at room temperature – 2 Pieces
  • Vanilla extract – 1 Teaspoon
  • Cinnamon – 1 Teaspoon (fill)
  • Softened butter – 2 Tbsp. spoons (glaze)
  • Vanilla extract – 1/2 Teaspoon (glaze)
  • Coffee – 1-2 Art. spoons (glaze)
  • Cream cheese at room temperature – 240 grams (cream)
  • Vanilla extract – 1 Teaspoon (cream)

Directions

  1. Make a fill. In a small bowl, mix all the ingredients together. Set aside. Make muffins. Preheat oven to 175 degrees. Line the muffin dish with paper inserts.
  2. Combine flour, sugar, baking powder and salt in a large bowl. Add butter, sour cream, eggs, vanilla extract and beat until smooth.
  3. Place 1 tablespoon of dough in each paper insert. Use a toothpick to make a small indentation in the middle of each muffin.
  4. Add 1 teaspoon of the pouring to each muffin and stir with the dough using a toothpick. Add 1 more tablespoon of dough and 1 teaspoon of filling, repeat the process.
  5. Bake muffins for 18-22 minutes. Allow to cool completely.
  6. To make the icing, beat the butter and sugar together in a bowl. Stir in vanilla extract. Add coffee until the desired consistency is achieved.
  7. Pour glaze over the chilled muffins, let stand for 15-20 minutes. After that, garnish with buttercream on top.
  8. To make the cream, beat the cream cheese and butter together in a large bowl. Add powdered sugar, 1 cup at a time, whisking after each addition. Stir in vanilla extract. Whisk well, adding a tablespoon of heavy cream if the cream is too runny.
