Ingredients

  • 4 sheets gelatin
  • 3 large egg (s)
  • 100 g suar
  • 1 lemon (s), juice and zest
  • 250 ml whipped cream

Instructions

  1. Soak 4 sheets gelatin in a bowl of cold water for 5 minutes.
  2. Beat 3 large eggs and 100 g sugar in a mixing bowl for 2-3 minutes until pale and frothy.
  3. Drain the gelatin well and place in a heatproof bowl. Set the bowl over a pot of simmering water on medium heat and stir constantly for about 1 minute until completely dissolved.
  4. Remove from heat and cool for 1 minute, then stir in the lemon juice and zest.
  5. Pour the gelatin mixture into the beaten egg mixture and stir gently to combine.
  6. Whip 250 ml cream for 2-3 minutes until stiff peaks form.
  7. Using a spatula, fold the whipped cream into the egg mixture with 2-3 gentle folds until just combined.
  8. Transfer the mousse to a serving bowl.
  9. Refrigerate for at least 3 hours until firmly set.
  10. Decorate with whipped cream just before serving.
