Coconut Flour Cake with Cottage Cheese

A recipe for a flavorful coconut flour cake with cottage cheese. It’s quick and easy to bake, incredibly tasty, but most importantly, it has less carbs than proteins and healthy fats! It’s truly a protein bake!

Servings: 6

Ingredients

  • Eggs – 5 pcs.
  • Cottage cheese – 250 g
  • Coconut flour – 3 tablespoon.

Directions

  1. Beat all the eggs into a bowl. Whisk the eggs to a lush foam, not until stiff peaks, just until fluffy.
  2. Add the cottage cheese to the eggs and mix until smooth. Do it preferably with a blender.
  3. Add the coconut flour to the mass. Mix well and leave the batter for 5-10 minutes. It should become quite thick.
  4. Transfer the prepared batter to a baking dish.
  5. Decorate the top with berries either fresh or frozen. You can also sprinkle the cake with sesame or poppy seeds, or coconut flakes.
  6. Bake the coconut flour cake with cottage cheese in a preheated 180 oven until crispy.
